I was really sad when I woke up this morning because I usually make breakfast at home when I don't have to work on a Saturday. Our contractors say that we should be up and running in the kitchen by the end of this week, but that assurance doesn't quell the rumble in my belly. Had I been able to cook today, I would've tried out these bad boys from Health Food Lover.

Anyway, I met with my first nutrition counseling client today and we got to talking about this recipe from Everyday Paleo. I'm really missing my kitchen right about now and it's not helping that I've been looking through recipes to try out once our renovations are completed. One thing I MUST cook when my kitchen is back in commission is my Braised Beef Short Ribs. I posted this delicious recipe on Danfredo Rivera a couple months back. Our kitchen renovation starts Monday, which means I'm not going to be able to cook for 23452354 days. I spent the better part of the evening clearing out the cabinets...and then looking for a suitable "Last Supper" to cook for tomorrow morning's breakfast. Wil just dropped a BOMBSHELL and told me that he wants to ditch his daily bag of chips for a "healthy snack" (his words). Woah. Since I work in a kitchen, salads are the easiest things for me to get my hands on for lunch. A lot of times, I check out the Internet for different salad ideas. Let's face it: you're gonna drink. Hell, I drink...too much on occasion, if you want to know the God's honest truth. It's a holiday and I'm actually off from work! This means that Wil is expecting me to cook breakfast. Wil and I desperately need to go food shopping, but we don't want to go crazy buying stuff since our kitchen is going to be out of commission for a couple of weeks while we renovate it. We ended up raiding our cabinets last night for dinner are were shocked to discover that we had all the ingredients for this quick supper from Eating Well. I skipped the bread and the cheese and also used some homemade mayonnaise. It's a yummy, FAST summer dinner recipe. Oh, and this goes great with a sauvignon blanc.
